How to Make Air Fryer Rice Paper Rolls
Step 1: Make the Filling
Mash the avocado in a bowl. Add the roasted corn, red onion, coriander, mint, lemon juice, tandoori masala, zaatar, salt and pepper. Mix gently so the corn keeps its shape.
Step 2: Soften the Rice Paper
Fill a wide plate with warm water. Dip one wrapper for about 10 seconds, then lay it on a damp board. It will keep softening as you add the filling, so don’t over-soak it or it will tear.
Step 3: Roll
Spoon about 2 tbsp of filling just below the centre. Fold the sides in, then roll up tightly like a spring roll. Repeat with the remaining wrappers. Tip: for extra crunch and fewer tears, use two wrappers per roll.
Step 4: Air Fry Until Crispy
Preheat the air fryer to 180°C (350°F) for 3 minutes. Spray the rolls lightly with olive oil on all sides and place them in the basket without touching, as rice paper sticks to itself. Air fry for 8–10 minutes, flipping halfway. For extra crispiness, turn the heat up to 200°C (390°F) for the last 2 minutes, until golden and bubbly. Lining the basket with perforated parchment helps stop sticking.
Step 5: Make the Tamarind Tahini Hummus
Blend the chickpeas until smooth. Transfer to a bowl and whisk in the tahini, tamarind pulp, yogurt, warm water, cumin and salt until creamy. Add a little more water if it’s too thick. Finish with a drizzle of olive oil and a swirl of tamarind.
Step 6: Serve
Let the rolls cool for a minute, then cut them diagonally to show the filling. Serve hot with the hummus, topped with pomegranate seeds, mint and a sprinkle of zaatar.
Recipe Notes and Variations
- Vegan swap: use plant-based yogurt in the hummus.
- No air fryer? Bake on a lined tray at 200°C for 12–15 minutes, turning once.
- Make ahead: the filling and hummus keep in the fridge for 1 day. Squeeze a little lemon over the filling to stop the avocado browning.
- Storage: the rolls are best eaten fresh, as rice paper softens as it cools. Reheat in the air fryer for 2–3 minutes.
Frequently Asked Questions
Why do rice paper rolls stick together in the air fryer?
Damp rice paper is very sticky. Leave space between the rolls, spray them with a little oil and don’t overcrowd the basket.
Are rice paper wrappers gluten-free?
Most rice paper is made from rice flour, water and salt, so it’s naturally gluten-free. Some brands add tapioca or wheat, so always check the label.
Can I use tinned corn?
Yes. Drain it well and pat it dry before pan-roasting so it chars instead of steaming.
