This air fryer za’atar chickpea and sweet potato bowl is a simple, filling plant-based meal. The air fryer turns the chickpeas golden and crunchy and gives the sweet potatoes caramelised edges with a soft centre, using only a few teaspoons of oil. Tossing the chickpeas in za’atar gives them a herby, lemony flavour, and a creamy garlic tahini drizzle brings everything together.
It’s crunchy, sweet and savoury, and a great option for an easy lunch or dinner.

How to Make It in the Air Fryer
Step 1: Air Fry the Sweet Potatoes
Toss the sweet potato cubes with the olive oil, salt and pepper. Spread them in a single layer in the air fryer basket and cook at 200°C (400°F) for 14–16 minutes, shaking halfway, until golden outside and soft inside.
Step 2: Air Fry the Za’atar Chickpeas
Toss the dry chickpeas with the olive oil, za’atar, garlic powder and salt. Air fry at 190°C (375°F) for 12–15 minutes, shaking the basket after 7 minutes, until crisp and crunchy. If your air fryer is large enough, you can cook them alongside the sweet potatoes at 190°C, but they may need a few extra minutes.
Step 3: Massage the Kale
While everything cooks, toss the kale with the olive oil and lemon juice. Massage it with your hands for about a minute until it softens and turns dark green.
Step 4: Make the Garlic Tahini
Whisk the tahini, garlic, lemon juice and salt together, then add warm water a spoonful at a time until the sauce is smooth and pourable. Tahini often thickens before it loosens, so keep whisking.
Step 5: Assemble
Divide the kale between two bowls. Top with the roasted sweet potatoes and crispy chickpeas, drizzle generously with the garlic tahini and sprinkle with sesame seeds.
Oven Method
No air fryer? Roast the sweet potatoes at 220°C (425°F) for 25–30 minutes and the chickpeas at 200°C (400°F) for 25–30 minutes, until crispy.
Storage
This bowl is best eaten fresh, while the chickpeas are crunchy. Keep leftover sweet potatoes and kale in the fridge for up to 3 days, and store the chickpeas separately. Re-crisp them in the air fryer for about 3 minutes before serving.
Frequently Asked Questions
What is za’atar and where can I find it?
Za’atar is a Middle Eastern blend of dried thyme or oregano, sesame seeds and sumac. Most supermarkets stock it in the spice aisle. For a quick swap, mix 1/2 tsp dried oregano or thyme with 1/2 tsp sesame seeds and a little lemon zest.
How do I keep the chickpeas crispy?
Dry them really well before cooking and don’t overcrowd the basket. Once cooled, store them uncovered or loosely covered, not in an airtight container, and eat within a day.
Is this bowl vegan and gluten-free?
Yes. All the ingredients are naturally vegan and gluten-free, but check your za’atar and other spice labels, as some blends are made in facilities that also handle wheat.
Can I meal prep this bowl?
Yes. Roast the sweet potatoes, make the tahini and prep the kale ahead, then air fry the chickpeas fresh or re-crisp them just before eating.
