Craving shawarma but want something lighter than the takeaway version? This healthy chicken shawarma wrap is packed with juicy, spiced chicken strips, crunchy fresh vegetables and a squeeze of lemon, all rolled in a soft homemade oats chapati. There is no refined flour and no shop-bought pitta, and each wrap gives you around 35g of protein. Cook the chicken in the air fryer or on a grill pan, whichever you prefer.

- Makes: 2 wraps
- Prep time: 15 minutes, plus at least 1 hour marinating
- Cook time: about 25 minutes (chicken and chapatis)
- Protein: about 35g per wrap
1. Shawarma Chicken
Ingredients
- 250g boneless, skinless chicken breast or thigh, cut into long thin strips
- 1 tbsp shawarma spice mix
- ½ tsp black pepper
- 1 tbsp lemon juice
- ½ tsp dried oregano
- 1 tsp Kashmiri red chilli powder (mainly for colour)
- ½ tsp chilli flakes
- 1 tsp roasted cumin powder
- 1 tsp roasted coriander powder
- Salt, to taste
- 1½ tbsp olive oil
- 1 tsp ginger garlic paste (optional, for extra flavour)
Method
- Marinate: Put the chicken strips in a bowl, add all the marinade ingredients and rub the spices well into the chicken. Cover and refrigerate for at least 1 hour. For the juiciest result, marinate for 3–4 hours.
- Air fryer (lighter option): Preheat the air fryer to 180°C. Arrange the chicken in a single layer and air fry for 10–15 minutes, turning halfway, until golden.
- Grill pan: Heat a grill pan over high heat and spray lightly with olive oil. Grill the chicken strips for 7–8 minutes, turning, until charred and golden.
- Check it is cooked: The thickest strip should be white all the way through with no pink, and the juices should run clear (75°C / 165°F on a food thermometer).
2. Homemade Oats Chapati
Ingredients
- 1 cup rolled oats (about 80g), blended into a fine flour
- ¾ cup water
- ¼ tsp salt
- ¼ tsp dried oregano
- A few drops of olive oil, for the pan
Method
- Make the batter: Mix the oat flour, salt and oregano. Slowly whisk in the water to make a thin, smooth, crepe-like batter. Let it rest for 5 minutes. If it thickens, add a splash more water.
- Cook: Heat a non-stick pan over medium heat and wipe it with a few drops of olive oil. Pour in a ladle of batter and spread it thinly, like a crêpe.
- Flip: Cook for 1–2 minutes until the edges lift and the base has light golden spots, then flip and cook for 30 seconds more.
- Keep soft: Stack the chapatis in a clean cloth while you cook the rest, so they stay soft and easy to roll.

3. Fresh Fillings
- 1 cucumber, thinly sliced
- 1 tomato, thinly sliced
- ¼ red onion, thinly sliced
- A few fresh coriander or mint leaves
- 1 tbsp yogurt sauce or tahini sauce (optional)
- Lemon wedges, to serve
4. Assemble the Shawarma
Lay a warm oats chapati flat and place half the chicken down the centre. Add the cucumber, tomato, onion and herbs, drizzle with yogurt or tahini sauce and add a squeeze of lemon. Fold in the bottom, then roll up tightly. For a crispy finish, toast the wrap seam-side down in a dry pan for about 1 minute.
Pro tip: For extra creaminess, spread 2 tbsp of our healthy chickpea hummus over the chapati before adding the filling. It is homemade, preservative-free and made with just 1 tbsp of olive oil.
Nutrition (Approximate, Per Wrap)
- Calories: about 455 kcal
- Protein: about 35g
- Carbohydrates: about 36g (including around 5g fibre)

These figures are estimates based on standard ingredient values and the amounts above, without hummus, and will vary with the brands and portion sizes you use. Adding 2 tbsp of hummus adds roughly 60 kcal per wrap.
Gluten-Free Option
Oats are naturally gluten-free, but they are often processed alongside wheat, so use oats labelled certified gluten-free if you need to avoid gluten completely. Also check the label on your shawarma spice mix, as some blends contain additives with gluten.
Meal Prep and Storage
- Marinated raw chicken can be kept covered in the fridge for up to 24 hours before cooking.
- Cooked chicken keeps in an airtight container in the fridge for up to 3 days. Reheat until piping hot.
- Store oats chapatis wrapped in a cloth inside a container for up to 2 days in the fridge, and warm briefly in a pan before rolling.
- Keep the fresh vegetables and sauce separate until you assemble, so the wrap does not go soggy.
Tips for the Best Wraps
- Cut the chicken evenly: Strips of the same thickness cook at the same speed and stay juicy.
- Thin batter, thin chapati: A thin, pourable batter gives soft, flexible chapatis that roll without cracking.
- Do not overfill: A modest filling rolls tightly and holds together better.
- Rest the chicken: Let it rest for 2 minutes after cooking so the juices settle before slicing or wrapping.
