How to Make the Smoky Lentil & Charred Eggplant Bowl
Step 1: Char the eggplant
Brush the eggplant slices on both sides with olive oil and season with salt and smoked paprika. Heat a griddle pan or heavy frying pan over high heat. Cook the slices in batches for 4–5 minutes per side, until deeply charred on the outside and completely soft in the middle. This char is what gives the bowl its smoky flavour.
Step 2: Make the tahini sauce
Whisk the tahini, lemon juice, smoked paprika and a pinch of salt in a small bowl. It may thicken at first; add warm water a spoonful at a time and keep whisking until smooth and pourable.
Step 3: Warm the lentils
Warm the cooked lentils in a small pan or the microwave and season with a little salt and pepper.
Step 4: Assemble
Divide the lentils between two bowls and top with the charred eggplant. Drizzle generously with the tahini sauce, then scatter over the pomegranate seeds, crispy onions and parsley. Serve warm.
Tips & Variations
- Cooking lentils from dry: rinse 1/3 cup dry brown or green lentils and simmer in plenty of water for 20–25 minutes until tender, then drain. This adds about 25 minutes to the total time.
- Oven option: roast the oiled eggplant slices at 220°C (200°C fan) for 20–25 minutes, turning once, then finish under a hot grill for extra char.
- Gluten-free: many shop-bought crispy onions are coated in wheat flour, so check the label or fry thinly sliced onions at home.
- Extra protein: add a handful of roasted chickpeas or serve with a side of hummus.
Frequently Asked Questions
Can I use red lentils?
Brown or green lentils are best because they hold their shape. Red lentils break down as they cook and become soft and mushy, which works well in soups and dals but not as a bowl base.
How should I store leftovers?
Keep the lentils and eggplant in an airtight container in the fridge for up to 3 days. Store the tahini sauce separately and keep the crispy onions in a dry container so they stay crunchy.
Is this lentil bowl vegan?
Yes, every ingredient is plant-based. If you need it gluten-free as well, choose crispy onions that are labelled gluten-free or make your own.
Why does my tahini sauce go thick?
Tahini often seizes when lemon juice is added. Keep whisking and add warm water gradually and it will turn smooth and creamy.
